These healthy nut bars are energy-packed and are great for eating around our workout to provide vital energy to train hard and recover properly.
20g desiccated coconut
40g almonds, ﬁnely chopped
50g walnuts, ﬁnely chopped
40g unsweetened dried cranberries
1/2 tsp vanilla extract
6 pitted dates, ﬁnely chopped
pinch of ground cinnamon
40ml unsweetened almond milk
1 tbsp creamed coconut
Place the ingredients in a bowl and mix well.
Line a tray with baking paper.
Transfer the mixture onto the tray and shape into a rectangle using a spatula.
Refrigerate for 1 hour or more.
Cut into 6 pieces and refrigerate until ready to serve.
