This mouth-watering star anise spiced apple and pear crumble is full of real fruit and high carbohydrate energy to help fuel and recover from your training.
2 tsps organic butter or coconut oil
5 star anise
2 small pieces cinnamon bark
2 large bramley apples, peeled and cut into chunks
2 pears, peeled and cut into chunks
3 tsps ground cinnamon
2 tsps honey
2 tsps organic coconut oil
70g oats (use gluten free if preferred)
2 tsps honey
30g ground almonds
2 tbsps chopped almonds
Preheat oven to 160˚C/320˚F.
Place a small saucepan over a medium heat.
Melt the butter / oil and add the star anise and cinnamon bark.
Stir gently for 1-2 minutes, to release the fragrances.
Remove saucepan from heat and leave to cool for several minutes.
Remove the star anise and bark from the butter.
Place the apples and pears in a large bowl.
Add the melted butter, ground cinnamon and 2 tsps honey.
Stir well to combine.
Melt the coconut oil in a large frying pan over a medium heat.
Add the oats and 2 tsps honey and stir well.
Remove pan from heat.
Stir in the ground almonds and chopped almonds.
Pour the apple mixture into a large ovenproof dish.
Cover thoroughly with the crumble mixture.
Bake for 45 minutes, or until the crumble is golden.
Serving suggestion: Serve with a few spoonfuls of Greek yoghurt.
Store in an airtight container and refrigerate for up to 3 days.
